Chocolate Quinoa Bites

These chocolatey bites are packed with nutrients, fibre and a complete protein. Great for a any age.. we all love them. Really good for kids lunch boxes or pre and post sports/activities for active kids too.
Add whatever you like to make then your own but I use:
A good quality dark chocolate - 70% or higher to get the benefits from the highly nutritious cacao. A good quality chocolate should only contain 4 ingredients at most.. Cocoa mass, Cocao butter and a little cane sugar and depending on the percentage you go for a little vanilla extract. Thats all.
Linwoods flaxseed mix with ground pumpkin seeds, goji berries, sunflower seeds and flax seed.
Puffed Quinoa - I like to use the brand Infinity Foods. You can find them at health food shops, some supermarkets or on Amazon.
Once the chocolate is melted I tend to free pour the flax mix and puffed quinoa, then mix it up until it reaches the consistency I am looking for. The less you add, the more it would be like a harder chocolate bar. The more you add, the less chocolate to filling ratio... and they come out a little more like how you would expect a rice crispy cake to look.
We like to make them both ways depending on what we fancy at the time. So quick and easy and you can freeze them too!
